Manchego is sweetly earthy and carries a sharp savoury flavour. Made from ewes milk in the region of La Mancha, in Spain. Manchego has a dry, thin, acorn-brown rind and a crumbly texture that contains many tiny cracks scattered throughout the interior. We like to cut the richness of this famous sheeps cheese with a dense quince jelly and a glass of fino sherry.
