Colston Bassett Shropshire Blue

A mellow and well-rounded blue cheese made in Nottinghamshire by Colston Bassett. The orange body comes from the addition of annatto, the pulp that surrounds the seeds of the South American Achiote tree. Made in a similar way to Stilton, this startling blue cheese actually derives from Scotland. Production moved when the Scottish Dairy closed. Shropshire Blue is matured for 10 – 12 weeks and has a fat content of around 34% which ensures its smooth and creamy interior.
